Our faculty, Department of Nutrition and Dietetics, Department of Dietetics on 13/11/2023 by Dr. Lecturer. Prof. Dr. Murat AÇIK and Dr. Lecturer. With the participation of Lecturer Murat ALTAN and 2nd-year students of the Department of Nutrition and Dietetics, a technical trip was organized within the scope of the 2023-2024 Academic Year Fall Term Nutrition Principles course.
In the event, the production activities of Elkas, Akbulut Meat and Meat Products Plant and Elazığ Milk Producers Union were introduced to the students. Elkas business manager Şenol ARSLAN and Veterinarian Hıdır ALTUNTAŞ gave information about the controls made before the slaughter of the animals, the slaughter of the animal and the general examinations by examining the carcass at the next stage, and the conditions of the warehouses where the carcass is kept.
Abdulvahap AKBULUT and Hüseyin AKBULUT, who are responsible for the Akbulut Meat and Meat Products Production Facility, made an introduction to the enterprise. In this context, information was given about the conditions of receiving the meat, the shredding of carcass meat, the production of processed meat products such as salami, sausage, sausage, roasting and packaging, the processing processes of white meat and the HACCP and ISO certificates of the institution. Adem KARA, a Food Engineer working at the Milk Producers' Association, gave information about the collection and storage conditions of milk, the quality of milk and the tests performed to determine the fraud and adulteration of milk in the laboratory.
